Tailgate Party Recipes
Football season is here and it’s time to party! Whether you are tailgating in the stadium parking lot, or in your living room, just gather some friends, family, St. Supéry wine and cheer for your favorite team.
I am a big fan of hearty, easy to prepare comfort food when it comes to tailgating and I think the following recipes fit the bill.
Prepare these a day or so in advance and you won’t spend game day slaving over a hot stove (or barbeque).
Black Bean & Chipotle Dip
Pair with St. Supéry Virtú
2 (15 ounce) black beans – drained
1 cup sour cream
1 tablespoon chipotle peppers (canned with adobo sauce)
1/4 cup fresh cilantro – chopped
1 garlic clove – peeled
1 teaspoon cumin
Juice from one lime
Combine all ingredients in the bowl of a food processor and process until beans are mashed but not totally pureed. Taste and add more chipotle if you like a little more heat. Cover and refrigerate for at least one hour before serving with tortilla chips
Grilled Bratwurst & Onions
Pair with St. Supéry Cabernet Sauvignon
2 packages of Johnsonville Bratwurst "Brats" (10 sausages)
2 large yellow onions – peeled and thinly sliced
4 cans of beer
Place the brats, onions and beer in a pan and heat to boiling (add a little water to cover if needed). Cover, turn down the heat and simmer for 15 minutes. Remove the brats and reserve. Strain the onions and brown in a sauté pan with a little olive oil.
Grill the bratwurst over medium heat for about 10 minutes – turning often. Serve on your favorite bun with the onions and mustard.
