focused and fresh Malbec with notes of cherry, red plum, graphite and baking spice aromas. A medium- to full-bodied wine with firm tannins, textured and juicy. The palate unfolds with lingering Bing cherry, cranberry, dried herbs and spice nuances.
Winemaking
The fruit was hand-harvested in the cool morning hours and brought to the winery in half-ton bins. The clusters were then sorted using a double sorting system. First, clusters were sorted by hand, then fruit was run through a small de-stemmer that removed stems from the grapes before the individual berries were sorted. This ensures the ideal grapes were chosen. Berries were fermented following a period of resting on skins. Warm fermentation temperatures were encouraged along with gentle cap maceration to achieve the desired color and structure for the wine before an extended maceration time on skins prior to pressing. The wine was transferred directly to barrel for 19 months of maturation.
