Winemaker’s Notes

Deep red and inky purple hue with aromas of black cherry, boysenberry, Mission fig, graphite, and espresso bean with hints of black olive tapenade and fennel pollen. Full and richly layered on the palate with notes plum, dark cherry, cassis, toasted oak and dried herbs. A wine of complexity and nuance with freshness and elegance, silky tannin structure and a lingering finish.

Winemaking

The fruit was hand-harvested and brought to the winery in half-ton bins. The clusters were then sorted using a double sorting system. First, the clusters were sorted by hand, then through a small de-stemmer before the individual berries were sorted. The fruit was then delivered to a fermenter for a period of resting on skins. Warm fermentation temperatures along with gentle cap maceration achieved the desired color and structure for the wine before an extended maceration time on skins prior to pressing. The wine was transferred directly to barrel for 19 months of maturation.

Eighteen percent of the sorted berries were fermented in small concrete tanks and fourteen percent were fermented in French oak barrels, adding layers of complexity to the wine.

Dollarhide Estate Vineyard

Located in the northeastern hills of Napa Valley, our Dollarhide Estate Ranch is a valley within a valley and has 1,530-plus acres, 500 planted to the vineyard. The oldest vines at Dollarhide Estate, now more than 30 years old, produce the full-bodied, robust cabernet sauvignon.

Vineyard elevations ranging from 600 to 1,100 feet above sea level, seven different soil series, 13 soil variations and unique microclimates, combine at Dollarhide to create an especially accommodating growing environment for Bordeaux grape varieties.

Parcel By Parcel

Our winemaking and vineyard team have a broad selection of soils and topography to choose from when selecting ideal vineyard sites at Dollarhide. Each parcel is planted with fruit quality and distinct character in mind. These parcels are then farmed individually so that the vines will thrive in their distinctive locations. Our team is able to match the right soils with the optimum combination of rootstock, clone selection and cultivation practices. The diversity of terrain results in a wide selection of fruit characteristics with which our winemakers work in producing estate sauvignon blanc and cabernet sauvignon, estate blends and the Dollarhide Estate single vineyard wines.

Sustainability

As a 100% estate grown, sustainably farmed winery, St. Supéry has 1,595+ acres of land with two thirds left in its natural state encouraging biodiversity. From the very beginning, we have farmed and operated as stewards of the land with preservation is our top priority.
