Winemaker’s Notes
A luscious, richly layered wine with concentrated aromatics of black raspberry, boysenberry, dried fig, dark chocolate, espresso and vanilla. A full-bodied, expansive wine on the palate highlighted by juicy black plum, blackcurrants, spice box, tobacco and dusty cocoa power. Dense and structured with firm tannins and bright acidity, elegant and polished for long-term aging and enjoyment.
Winemaking
The fruit was hand-harvested in cool morning hours and sorted using a double system—first by hand, then through a de-stemmer before berry sorting. Fermentation followed a period of skin contact, with warm temperatures and gentle cap maceration to enhance color and structure. After extended maceration, the wine was pressed and transferred directly to barrel for 19 months of maturation.
Ninety-two percent of the blend was fermented in oak, fifty two percent of the sorted berries were fermented in small French oak tanks, and forty percent of the sorted berries were fermented in French oak barrels, all to add layers of complexity to the blend.
