This Cabernet Sauvignon presents with deep dark shades of reds and purples. Aromas of black currant and black plum leap from the glass and are joined by notes of anise, white pepper and cocoa. Flavors of black plum and cassis follow with toasted oak, a subtle hint of vanillin and espresso. This wine has brooding flavors, tremendous length, a fine texture and incredible structure.
Despite good rainfall in December of 2014, January and February of 2015 brought warm, spring-like daytime temperatures with minimal precipitation. Little rain was recorded in March and April and as the temperatures cooled, the fruit set slowly over three weeks. May stayed warm and we experienced significant hot spells in June, July and August. Harvest kicked off on September 4th and while yields were light, the quality of our fruit was terrific.
In the cool morning hours, the grapes were harvested by hand and brought to the winery where they were hand sorted. Warm fermentation temperatures along with gentle cap maceration helped achieve the desired color and structure for the wine before an extended maceration time on the skins. The wine was transferred directly to barrel for 19 months of maturation.
