Tasting Notes
Opulent, jewel-tone red hues present in this wine. Ripe blackberry and dried plum combine with exotic anise and clove aromas on the nose. Flavors of black licorice and deep raspberry complement distinct notes of toasted oak and smoky mocha. This is a highly structured Cabernet Sauvignon with luxurious, round tannins.
Winemaking
Despite good rainfall in December of 2014, January and February of 2015 brought warm, spring-like daytime temperatures with minimal precipitation. Little rain was recorded in March and April and the temperatures cooled, slowly drawing out the setting of the fruit over three weeks. May stayed warm, and we experienced significant hot spells in June, July, and August. Cabernet Sauvignon harvest kicked off on September 4, 2015 and while the yields were light, the quality of our fruit was terrific. Harvested by hand in the cool morning hours, the grapes were brought to the winery where they were hand and optical sorted. Warm fermentation temperatures along with gentle cap maceration helped achieve the desired color and structure for the wine before an extended maceration time on the skins.
