Tasting Notes
A wine of great precision highlighting a distinctive sense of place. Captivating aromas of blackberry, plum, graphite, cedar and roasted espresso are met on the palate by silky layers of black fruit, baking spices, and a hint of anise and cocoa powder. An elegant Cabernet Sauvignon with fine-grained tannin structure and length.
Winemaking
The fruit was hand-harvested in the cool morning hours and brought to the winery in half-ton bins. Clusters were sorted using a double sorting system, first by hand, then through a small de-stemmer to remove stems before individual berries were sorted to ensure ideal selection. The berries were delivered to a fermenter for resting on skins. Warm fermentation and gentle cap maceration achieved desired color and structure before pressing. The wine was transferred to barrel for 19 months of maturation.
Thirty eight percent of the sorted berries were fermented in new French oak barrels, thirty eight percent in small French oak tanks, and fifteen percent in small concrete tanks, adding layers of texture and complexity.
