Tasting Notes
Profile of bright yellow and green touches with opening aromas of lemon custard and Key lime pie followed by hints of lemon grass and vanilla. The mouth feel is decadent with lemon meringue and dried stone fruit on the palate with subtle toasted oak complexity and richness throughout. This is an elegant, nuanced wine with layers of creaminess and textural refinement.
Winemaking
After achieving the desired flavors on the vine, the Sémillon was harvested in the cool morning hours in an effort to preserve the delicate flavors. In the cellar, grapes were pressed to tank and immediately chilled and settled prior to fermentation. The fermentation was completed in barrel and concrete tank at cool temperatures to maintain and enhance the natural flavors. The final blend was completed after 5 months of sur-lies maturation.
