Tasting Notes
Fresh and engaging, the 2024 Sauvignon Blanc opens with white peaches, apricots, lemon essence, a hint of lime peel, and ripe pear aromatics. The inviting full-bodied palate offers yellow grapefruit, ripe melon and lemon custard, with an expressive mouth feel and pleasing acid structure. The long, lingering finish unfolds with citrus and a touch of toasted oak.
Winemaking
After achieving the desired flavors on the vine, the grapes were harvested in the cool morning hours in an effort to preserve the delicate flavors. Once received in the cellar, the grapes were pressed to tank and immediately chilled and settled. Fermentation occurred in both stainless steel tanks and new French oak barrels at cool temperatures to maintain and enhance the natural flavors. The final blend was completed after 5 months of sur-lies maturation to capture the lovely fresh qualities and intensity of flavor.
