2017  Ru3

Deep hues of dark red illustrate the density of this wine. Dark blackberry and black plum encompass nuances of espresso, dark chocolate and toasted vanillin oak along with a hint of dusty terroir. Cassis, black plum, and blackberry dominate with integrations of dark chocolate and toasted oak. This is a dark, centered wine of tremendous length with a structured core and fine-grained tannin.

2018 Dollarhide Estate Vineyard Cabernet Sauvignon

This cabernet sauvignon’s dark fruit aromas of black plum and cassis are tight yet bright with hints of vanillin and toasted barrel, with a note of licorice and ground pepper. Big juicy blackberry flavors are evenly textured, structured and carry with length. The wine is ripe and opulent with an appealing note of dark chocolate and dusty cocoa feel. A serious cabernet sauvignon that has integrity; built to reward with time in the cellar.

2018 Rutherford Estate Vineyard Cabernet Sauvignon 

Deep hues of purple and red reflect the density of this wine. Aromas of blackberry, fresh raspberry, and plum are met with nuances of espresso and black licorice. Sweet juicy blackberry and black currant dominate the palate with notes of anise and charred oak in the background. This is a centered wine with a tremendous, supple texture

2018 Napa Valley Estate Cabernet Sauvignon

Opulent purple and red hues present this wine. Cassis, black plum and dark raspberry aromas combine with anise and subtle vanilla, evidence of the toasted oak maturation. Juicy blackberry and black currant flavors mingle with dark cocoa, black licorice, espresso and subtle toasted oak.  This textured and elegantly structured cabernet sauvignon exhibits a velvety tannin finish.

2021 Dollarhide Estate Vineyard Sauvignon Blanc

This white wine presents brilliant hues of pale yellow and green. Fresh aromas of lemon, lemon custard, basil and anise are complemented by a vanillin thread, from the element of subtle new French oak. Lemon and lime citrus flavors follow with the essence of pear. The toasted oak qualities from the barrel maturation have encouraged a full rich mouth feel, along with the subtle creaminess of the sur-lie maturation. This sauvignon blanc is crisp with rich flavor.

Winemaking

The fruit was hand-harvested in the cool morning hours and brought to the winery in half-ton bins. At the winery, the clusters were sorted using a double sorting system. First, the clusters
were sorted by hand. The fruit then ran through a small de-stemmer that removed stems from the grapes before the individual berries being sorted to ensure that the ideal grapes were chosen. These berries were delivered to a fermenter where there was a period of resting on skins. Warm fermentation temperatures were encouraged along with gentle cap maceration to achieve the desired color and structure for the wine before an extended maceration time on skins prior to final pressing. The wine was transferred directly to barrel for 20 months of maturation. Seventy-eight percent of the sorted berries used in this blend was fermented in French oak barrels to add layers of complexity to the wine. After fermentation, the wine remained in those same barrels for aging

2018 Dollarhide Estate Vineyard Cabernet Sauvignon

The fruit was hand-harvested in the cool morning hours and brought to the winery. At the winery, the clusters were sorted using a double sorting system. First, the clusters were sorted by hand. The fruit then ran through a small de-stemmer before the individual berries being sorted to ensure the ideal grapes were selected. These berries were delivered to a fermenter where they rested on their skins. Warm fermentation temperatures along with gentle cap maceration to achieve the desired color and structure, before an extended maceration time on skins prior to final pressing. The wine was transferred directly to barrel for 19 months of maturation. Twelve percent of the sorted berries used in this blend was fermented in small French oak tanks, ten percent of the sorted berries were fermented in new French oak barrels and nine percent of the blend was fermented in small concrete tanks, all to add layers of complexity to the wine.

Then, the fruit ran through a small de-stemmer before the individual berries were sorted again to ensure that the ideal grapes were chosen. These berries were delivered to a fermenter where there was a period of resting on skins. Warm fermentation temperatures were encouraged along with gentle cap maceration to achieve the desired color and structure for the wine before an extended maceration time on skins prior to final pressing. The wine was transferred directly to barrel for 20 months of maturation.

Fifty-four percent of the grapes used in this blend was fermented in French oak barrels to add layers of complexity to the wine. After fermentation, the wine remained in those same barrels for aging.

2018 Napa Valley Estate Cabernet Sauvignon

The 2018 growing season started with a relatively mild winter and spring.  We experienced decent rainfall in early and mid-January, almost none in February, and a fair amount in March and April which filled up our lakes and kicked off the growing season. With a warm July, markedly cooler temperatures in August with no heat spikes, the weather remained ideal through September and October. There was a little rain in early October, but warm weather and dry breezes followed, allowing the grapes to hang on the vines longer and further develop their flavors. Harvest continued through November because of the ideal weather enabling the fruit to stay on the vine with no pressure from Mother Nature.  The quality of the fruit was terrific, and the resulting wines show tremendous promise.

2021 Dollarhide Estate Vineyard Sauvignon Blanc

After achieving the desired flavors on the vine, the sauvignon blanc was harvested in the cool morning hours in an effort to preserve the delicate flavors. The fruit was received in the cellar, where the grapes were pressed to tank and immediately chilled and settled prior to fermentation. Fermentation occurred in both stainless steel tanks and new French oak barrels at cool temperatures to maintain and enhance the natural flavors. The final blend was completed after 5 months of sur-lie maturation to capture the lovely fresh qualities and intensity of flavor of the Sauvignon Blanc.
