2021 Dollarhide Sauvignon Blanc

This white wine presents brilliant hues of pale yellow and green. Fresh aromas of lemon, lemon custard, basil and anise are complemented by a vanillin thread, from the element of subtle new French oak. Lemon and lime citrus flavors follow with the essence of pear. The toasted oak qualities from the barrel maturation have encouraged a full rich mouth feel, along with the subtle creaminess of the sur-lie maturation. This sauvignon blanc is crisp with rich flavor.

2018 Rutherford Estate Vineyard Merlot

A burgundy shade of red commence this wine. Aromas of black plum and black cherry combine with graphite, milk chocolate, and black pepper with a subtle thread of vanilla from the toasted oak.  This is a generous merlot with nice freshness on the palate show casing juicy blackberry and toasted oak.  There is a cocoa powder texture with smooth tannins and a long finish.

2017 Dollarhide Elevation

This cabernet sauvignon presents with deep dark shades of reds and purples. Aromas of blackberry, plum, and boysenberry leap from the glass and are joined by notes of dark chocolate. Flavors of black current and juicy plum follow with toasted oak and a hint of espresso. This wine has brooding flavors, tremendous length, fine texture, and incredible structure.

Winemaking

2021 Dollarhide Sauvignon Blanc

After achieving the desired flavors on the vine, the sauvignon blanc was harvested in the cool morning hours in an effort to preserve the delicate flavors. The fruit was received in the cellar, where the grapes were pressed to tank and immediately chilled and settled prior to fermentation. Fermentation occurred in both stainless steel tanks and new French oak barrels at cool temperatures to maintain and enhance the natural flavors. The final blend was completed after 5 months of sur-lie maturation to capture the lovely fresh qualities and intensity of flavor of the Sauvignon Blanc.

2018 Rutherford Estate Vineyard Merlot

Th e fruit was hand-harvested in the cool morning hours and brought to the winery in half-ton bins. Clusters were sorted using a double sorting system: first, the clusters
were sorted by hand then the individual berries were sorted to ensure that only the ideal grapes were chosen.  These grapes were delivered to a fermenter for a period of resting on skins. Warm fermentation temperatures were encouraged along with gentle cap maceration to achieve the desired color and structure before an extended maceration time on skins prior to final pressing. The wine was transferred directly to barrel where it aged for 19 months. Sixty five percent of the berries used in this blend were fermented then aged in French Oak barrels for added layers of complexity.

2017 Dollarhide Elevation

The fruit was hand-harvested in the cool morning hours and brought to the winery in half-ton bins. At the winery, the clusters were sorted using a double sorting system. First, the clusters were sorted by hand. The fruit then ran through a small de-stemmer that removed stems from the grapes before the individual berries being sorted to ensure that the ideal grapes were chosen. These berries were delivered to a fermenter where there was a period of resting on skins. Warm fermentation temperatures were encouraged along with gentle cap maceration to achieve the desired color and structure for the wine before an extended maceration time on skins prior to final pressing.
