Smoked Sturgeon “Waldorf” Salad

Serves 4


1 lbs Tsar Nicoulai Smoked Sturgeon, flaked

1 head Frisée, torn into bite-sized pieces

1 Granny Smith Apple, thinly sliced

¼ C Walnuts, toasted and chopped

2 Tbl Chives, minced

2 Tbl Tarragon, minced

1 Shallot, minced

2 Tbl White Wine Vinegar

2 tsp Sugar

¼ C Crème Fraiche

1 Tbl Poppyseeds

2 Tbl Extra Virgin Olive Oil

Salt and Black Pepper


  1. In a small bowl, place shallots, vinegar and sugar and let sit for at least 30 minutes and up to 2 hours. Whisk in crème fraiche, poppyseeds, and olive oil and season well. Let rest in fridge until ready to use.
  2. When ready to serve, toss frisée with some of the dressing and divide among plates.
  3. Divide and arrange the sturgeon, apple, and walnuts as desired, then drizzle all with a little more dressing and sprinkle with the chives and tarragon.
