Winemaker’s Notes

This wine exhibits a nice light yellow color with green and gold hues. Aromas of nectarine, orange and lemon mingle with a slight butterscotch note and very subtle toasted oak. The palate is round, delivering citrus flavors of lime, grapefruit and lemon with well-integrated wet stone along with subtle oak. A white wine with a lot of character and texture, 2019 Virtú has a long, lingering citrus finish.

Winemaking

After achieving the desired flavors on the vine, the semillon and sauvignon blanc were harvested in the cool morning hours in an effort to preserve the delicate flavors. The fruit was received in the cellar where the grapes were pressed to tank and immediately chilled and settled prior to fermentation. The fermentation was completed with part in stainless steel tank, part in concrete tank, and part in barrel at cool temperatures to maintain and enhance the natural flavors. The final blend was completed after 5 months of maturation on yeast lees

Parcel By Parcel

Our winemaking and vineyard team have a broad selection of soils and topography to choose from when selecting ideal vineyard sites at Dollarhide. Each parcel is planted with fruit quality and distinct character in mind. These parcels are then farmed individually so that the vines will thrive in their distinctive locations. Our team is able to match the right soils with the optimum combination of rootstock, clone selection and cultivation practices. The diversity of terrain results in a wide selection of fruit characteristics with which our winemakers work in producing estate sauvignon blanc and cabernet sauvignon, estate blends and the Dollarhide Estate single vineyard wines.

Sustainability

As a 100% estate grown, sustainably farmed winery, St. Supéry has 1,595+ acres of land with two thirds left in its natural state encouraging biodiversity. From the very beginning, we have farmed and operated as stewards of the land with preservation is our top priority.
