2 peaches, ripe
1/8 tsp Cinnamon, ground
2 tsp local honey
1/2 cup heavy whipping cream
1 drop vanilla extract
1/2 tsp Sugar
1/2 oz AJD: Spirit of St. Supéry Moscato Brandy
Preheat oven to 400f. Slice peaches in half vertically and remove the pit. Lay the peach halves cut side up in a baking dish and drizzle with honey and sprinkle cinnamon and salt evenly over the top. Bake until the top surface is bubbling and caramelized and the peaches are slightly softened, about 15-20 minutes. Set aside and allow to cool to room temperature. Whip cream with sugar and vanilla extract until thick and creamy, finish with St. Supéry Brandy to taste.
Serve a big dollop on the peaches alongside St. Supéry Napa Valley Estate Moscato or a snifter of AJD: Spirit of St. Supéry Brandy.
