The Best Cheese Board

Cheese boards are a great feature at holiday functions. They are easily prepped ahead of time and, when built correctly, can pair with a wide range of whatever wines you’re pouring for your guests.
Make sure to have cheeses from a variety of texture categories such as triple cream brie, soft Havarti, semi-hard cheddars, aged goudas and manchego.
It’s also nice to have cheeses from different animal milks like goat, cow, sheep and water buffalo, as well as different parts of the world. Try cheeses from America, France, Italy, and Spain.
The key is to have variety; something for everyone and every wine. Incorporating a selection of dried and fresh fruits like cherries, apricots, cranberries, grapes and sliced apples along with toasted nuts, olives, mustards and crackers will round out pairings and add vibrant color.

and Cowgirl Creamery Mt. Tam. This triple cream cow’s milk cheese is soft, creamy and buttery with a mellow, earthy flavor.
Wine Pairing: 2012 Rutherford Estate Vineyard Cabernet Franc
and Bellwether Farms Pepato. A semi soft sheep’s milk cheese studded with black peppercorns, this cheese is aged 2-3 months. It is tangy and salty with a flaky yet, creamy texture with peppery and floral aromas.
