Tasting Notes
A deeply hued wine with aromas of Bing cherry, blackberry briar and hints of fresh cut pine, roast coffee, vanillin and toasty oak. Juicy and fresh on the palate with ripe plum, currant, anise, black olive and black pepper spice intertwined with cocoa and dusty fine-grained tannins. A classically structured Napa Valley Cabernet Sauvignon with a lingering, opulent finish.
Winemaking
The fruit was hand-harvested in the cool morning hours and clusters were sorted using a double sorting system. First they were sorted by hand, then ran through a small de-stemmer before individual berries were sorted. Fruit was delivered to a fermenter where warm fermentation temperatures were encouraged along with gentle cap maceration to achieve the desired color and structure for the wine before an extended maceration time on skins. The wine was transferred directly to barrel for 18 months of maturation.
