Tasting Notes
Aromas of wet stone and salty ocean spray meet fresh lemon and lime citrus. On the palate, flavors of ripe pink grapefruit, lime zest, and Meyer lemon combine in this beautifully textured wine that offers a rich mouth feel with lingering minerality in the finish.
Winemaking
After achieving the desired flavors on the vine, fruit was harvested in the cool morning hours in an effort to preserve the delicate flavors. In the cellar, grapes were pressed to tank and immediately chilled and settled prior to fermentation. Fermentation occurred in concrete tank exclusively at cool temperatures to maintain and enhance the natural flavors. The final blend was completed after 5 months of sur-lies maturation to capture the lovely fresh qualities and intensity of flavor of the Sauvignon Blanc.
