Strawberry and Chevre Bruschetta with Balsamic Reduction

INGREDIENTS

1 baguette, sliced into ½ inch pieces
Extra virgin Olive oil
Salt and pepper to taste
1 ½ pounds fresh strawberries, medium dice
1 cup chevre
1 cup balsamic vinegar
Juice of 1 orange
1 t fresh lemon verbena, minced
1 t fresh basil, minced

INSTRUCTIONS

Preheat oven to 350 degrees. Rub baguette slices with olive oil and sprinkle with salt and pepper. Toast in the oven until golden brown and crispy, about 20 minutes. While the bread is toasting, put balsamic vinegar and orange juice in a small sauce pot. Reduce over medium-low heat until thick, about 15 minutes. set aside. In a bowl, combine strawberries, lemon verbena, basil, and a drizzle of olive oil. Toss until combined. When the crostini are cool, top with a generous smear of chevre, the strawberry mixture, and garnish with a drizzle of the balsamic reduction. This is also wonderful with figs when they are in season!
