For many years, California Sauvignon Blanc was a cash crop—a wine made quickly and inexpensively, funding the bills and materials (oak barrels, for instance) for more “serious” bottlings. But that’s no longer the case. Sales are rising and demand for grape supplies is reaching a critical mass.
